4 OUNCES DRIED CALIMYRNA FIGS (ABOUT CUP)

CUP ALL-PURPOSE FLOUR

CUP WHOLE-WHEAT FLOUR

CUP PACKED DARK BROWN SUGAR

1 TEASPOON GROUND CINNAMON

TEASPOON GROUND GINGER

TEASPOON BAKING POWDER

TEASPOON SALT

CUP LIGHT (MILD) MOLASSES

2 TABLESPOONS BUTTER OR MARGARINE, MELTED

1 TEASPOON VANILLA

1 LARGE EGG WHITE

1 Preheat oven to 350°F. Line 8-inch square baking pan with foil (see page 14); grease foil.

2 With kitchen shears, cut stems from figs; cut figs into small pieces.

3 In large bowl, with spoon, stir figs, all-purpose flour, whole-wheat flour, brown sugar, cinnamon, ginger, baking powder, and salt until mixed. Stir in molasses, butter, vanilla, and egg white just until blended and evenly moistened. With metal spatula, spread batter evenly in prepared pan (batter will be sticky).

4 Bake until toothpick inserted in center comes out clean, 20 to 25 minutes. Cool completely in pan on wire rack.

5 When cool, lift foil, with pastry, out of pan; peel foil away from sides. Cut into 3 strips, then cut each strip crosswise into 4 pieces.
